Light Gives Heat makes a Pineapple Upside Down Cake in a Solar Cooker

Today was a sunny day in Jinja, so we decided to make a cake in the solar cooker. Our new volunteers, Meghan and Sarah are learning all about solar cooking and practicing their demonstration skills with the tailors. Sarah decided to make a special pineapple upside down cake. She mixed sugar and margarine with pineapples at the bottom of the pan and then poured 'the easiest cake' (1 egg, 1c flour, 1t baking powder, 1c oil, 1/2c sugar) over top. We baked it in the solar cooker for 2 hours and even though it was cloudy for a while, the cake was perfectly browned when we opened it up. Sarah turned it over onto the plate and it was all warm and gooey. We shared it with the tailors and they agreed that it was the best solar cake yet. We look forward to demonstrating all sorts of solar cooking with the Suubi ladies. So far, 25 Suubi ladies and Epoh tailors are testing the CooKits at home. They've cooked rice, beans, posho, meat and pasteurized a lot of water. We're looking forward to passing the CooKits around to all members of the group. In June, we'll sell the 25 CooKits we have and make an order for as many more as we need. The money we collect from the ladies will go into a group account to use to buy food for future demonstrations around the neighborhoods. We will become solar cooking advocates in the community and hope to teach and sell CooKits to everyone.
